Stuffed aubergine with beef mince and grated cheese recipe
I was searching the amount of calories that different food has and saw that aubergine is very low fat aliment with just 25 calories per 100 grams, and it helps to reduce weight and cholesterol levels. So this comes perfect for me to tell you the secret of one of my mum’s favourite recipes, stuffed aubergine. It is very tasty and healthy.

Step-by-step:
Preheat the oven to 200 C.
Before you cut the aubergines in half, my mum always warms them up a bit in the microwave to make easier emptying them. She puts them for around 2 minutes. Leave the aubergines to cool down, and halve them lengthways through the stalk. Empty the flesh, taking the knife through the flesh down to the skin, but taking care not to cut through the skin. Dice the flesh.
Heat the olive oil in a large non-stick frying pan. Add the garlic, fry for 3-5 minutes. Add the minced beef and the aubergine’s flesh and season with a pinch of salt. Fry until the meat is lightly browned. Stir in the tomato sauce and leave to simmer for 5 minutes.
Spoon the mixture into each aubergine shell and sprinkle with the grated cheese. Place the aubergine halves, skin-side down, in a roasting tin large enough to accommodate them snugly. Roast for about 10 to 15 minutes, until golden brown. Remove from the oven and allow cooling slightly.
